The concept reflects a balance between traditional London dry structure and distinctly Japanese botanical elements, with production rooted in a region known for both sake and spirit craftsmanship. A neutral grain spirit is used as the base, selected for clarity and a clean profile. Distillation is carried out in copper pot stills, allowing for careful control over botanical extraction and vapour flow. The process follows a single-shot method, meaning all botanicals are distilled together to achieve an integrated flavour profile.
The botanical composition combines classic gin elements with regional ingredients. Juniper, coriander seed, and angelica root provide the structural foundation, while yuzu, sansho pepper, shiso leaf, and ume introduce a distinctly Japanese character. These additions contribute citrus brightness, herbal freshness, and a subtle peppery spice. Botanicals are introduced through maceration prior to distillation, allowing essential oils to be fully extracted into the spirit.
