Description

Description:

Released as part of a limited annual series, this expression commemorates the founding of the Dennery distillery in 1931 and marks the 85th anniversary of rum production in St Lucia. Each edition in the series is built as a unique blend, with the sixth edition representing a transition point before the range moved away from strictly annual releases. Blending sits at the core of production. Rather than relying on a single distillation style, this rum combines both column still and pot still distillates, creating a layered structure that balances weight and clarity. Column still components provide a cleaner, more refined backbone, while pot still distillates introduce heavier congeners and aromatic intensity.

The blend includes rums aged between approximately 6 and 12 years, matured primarily in ex-bourbon oak casks under tropical conditions. Tropical ageing accelerates interaction between spirit and wood, increasing extraction of vanillin, spice compounds, and tannins while promoting oxidation. A small proportion of cane juice distillate is also included, adding a fresher, slightly grassy dimension to the overall profile. The composition is notably complex, incorporating multiple marques and still types in carefully measured proportions. This multi-layered approach allows the blender to combine different maturation levels, distillation styles, and flavour profiles into a cohesive final spirit. The result is not driven by a single dominant element, but by integration across components.

Bottled at 46 percent alcohol, the rum is designed to retain structure and aromatic intensity without dilution masking its complexity. Limited production and batch variation further position it as a collector-focused release rather than a standardised commercial product. The overall style reflects the St Lucian approach to rum, where blending across still types is used to achieve balance between richness and precision, rather than emphasising a single production method.

Tasting Notes
Nose:
Complex and layered, with raisin, orange peel, and tropical fruit. Notes of honey, spice, and light vanilla sit alongside a faint herbal and slightly grassy edge.

Palate:
Structured and balanced, with a mix of dried fruit, spice, and oak. Pot still elements bring depth and a slightly robust character, while column distillate maintains clarity. Subtle coffee and grassy notes add complexity.

Finish:
Medium to long, with lingering spice, oak, and dried fruit. A light dryness and gentle warmth remain, with a slightly herbal fade.
