Description:

Produced in the village of Ay in Champagne, this cuvee is the flagship non vintage expression of the Ayala house, one of the historic Grandes Marques founded in 1860. Now owned by the Bollinger family, Ayala is known for a lighter, more precise style that emphasises freshness, low dosage, and Chardonnay influence. The blend is typically composed of Chardonnay, Pinot Noir, and Pinot Meunier, with a notable emphasis on Chardonnay, often forming the backbone of the wine. Chardonnay contributes freshness, acidity, and floral character, while Pinot Noir adds structure and length, and Pinot Meunier introduces fruitiness and roundness.

Vinification is carried out parcel by parcel, with each base wine fermented separately in stainless steel tanks to preserve purity and control. Only the first pressing juice is used, ensuring clarity and finesse. Malolactic fermentation is generally completed, softening acidity and contributing to balance. A defining feature of Ayala Brut Majeur is its relatively low dosage compared to many non vintage Champagnes. This allows the natural acidity and mineral structure to remain prominent, resulting in a drier and more linear style.

Ageing on lees takes place for several years, longer than the legal minimum, which contributes to fine mousse development and subtle autolytic notes such as brioche and toast. Despite this, the wine retains a fresh and fruit-driven profile rather than heavy richness. Blending is central to consistency, combining wines from multiple vintages to maintain house style. The result is a Champagne that balances precision with approachability, often considered a lighter alternative to richer, oak-driven houses.

The overall style is clean, dry, and refined, with emphasis on citrus, floral notes, and finesse rather than weight.

Tasting Notes
Nose:
Fresh and expressive, with citrus, white flowers, and green apple. Subtle hints of brioche and light toast add complexity.

Palate:
Crisp and balanced, with lemon, orchard fruit, and a fine mineral edge. Chardonnay brings freshness, while Pinot Noir adds gentle structure.

Finish:
Medium in length, with a clean, dry finish. Lingering citrus and light toast notes give a refined and elegant close.
