Produced in Ay in Champagne, this cuvee reflects the house style of freshness and precision. The blend is composed of Chardonnay, Pinot Noir, and Pinot Meunier, with a notable emphasis on Chardonnay. This gives the wine a lighter structure, higher perceived acidity, and a more floral and citrus-driven profile compared to heavier styles.
Vinification is carried out parcel by parcel, with each base wine fermented separately in stainless steel to preserve purity. Only the first pressing is used, ensuring clarity and finesse in the final blend. Malolactic fermentation is typically completed, softening acidity while maintaining balance. A defining characteristic of Ayala Brut Majeur is its relatively low dosage. This allows the natural acidity and mineral profile to remain prominent, resulting in a drier and more linear style than many non vintage Champagnes.
