Produced in Ay in the Champagne region of France, this cuvee is Ayala's prestige Blanc de Blancs, released only in selected vintages. The 2016 vintage reflects the house style of precision and low dosage, combined with the purity and structure of top Chardonnay from the Cote des Blancs. The wine is made exclusively from Chardonnay sourced from Grand Cru and Premier Cru vineyards, including villages such as Chouilly, Cramant, and Le Mesnil-sur-Oger. These chalk-rich sites are known for producing wines with high acidity, minerality, and long ageing potential.

Vinification is carried out on a parcel basis, with each plot fermented separately in stainless steel to preserve freshness and control. Only the first pressing juice is used, ensuring clarity and finesse in the base wines. A key feature is extended ageing on lees, typically around six years. This prolonged maturation develops texture, fine bubbles, and subtle autolytic notes such as brioche and pastry, while maintaining a clean and linear structure. Dosage is kept relatively low (around 6 grams per litre), allowing the natural acidity and mineral profile to remain prominent. This results in a drier, more precise style compared to richer Champagne houses.

The 2016 vintage itself was marked by variable weather, but careful vineyard selection ensured high-quality Chardonnay with strong aromatic definition and balance. The result is a Champagne that combines freshness with depth, rather than overt richness.
