Bayou Rum captures the rich heritage, culture, and flavour of the American South, offering a distinctive take on rum rooted in the traditions of Louisiana. Produced by Louisiana Spirits in the small town of Lacassine, Bayou Rum stands apart by embracing locally sourced ingredients and a deep connection to its regional identity.
At the heart of Bayou Rum is Louisiana sugarcane, one of the oldest and most important agricultural products in the state. Unlike many rums that rely on imported molasses, Bayou Rum is crafted using fresh local molasses derived from Louisiana sugarcane, giving it a distinctive richness and authenticity that reflects the land it comes from. This commitment to local sourcing is central to the brand’s philosophy and plays a key role in defining its flavour profile.
Production begins with carefully fermented molasses, which is then distilled in copper pot stills to create a smooth and characterful spirit. The rum is aged in American oak barrels, often previously used for bourbon, allowing it to develop notes of vanilla, caramel, spice, and toasted wood. The warm, humid climate of Louisiana accelerates the ageing process, intensifying the interaction between spirit and barrel and resulting in a bold, full-bodied rum.
