Produced in Ay in the Champagne region, this cuvee represents Bollinger's flagship vintage release, made only in years of sufficient quality. The 2012 vintage is widely regarded as one of the strongest of the decade, delivering both concentration and balance, and is particularly well suited to long ageing. The blend is typically dominated by Pinot Noir, supported by Chardonnay, sourced from a selection of Grand Cru and Premier Cru vineyards across the Montagne de Reims and Cote des Blancs. Around 21 crus contribute to the final wine, with key villages including Ay, Verzenay, and Le Mesnil-sur-Oger.
A defining feature of production is fermentation in small oak barrels rather than stainless steel. This traditional method introduces controlled oxygen exposure during vinification, contributing to greater texture, structure, and complexity. It also differentiates Bollinger from more reductive Champagne styles. Only the first pressing is used, ensuring purity and concentration. Malolactic fermentation is often limited or partially avoided, preserving acidity and allowing the wine to maintain a firm backbone suitable for extended ageing.
Ageing on lees typically exceeds five years and is often closer to seven in practice. During this period, the wine develops autolytic characteristics such as brioche, toasted nuts, and pastry, while maintaining freshness. Bollinger also ages this cuvee under cork rather than crown cap, a rare practice that contributes to a more refined mousse and texture. The magnum format enhances these characteristics further. The larger volume slows oxidation and ageing, resulting in finer bubbles, improved integration, and greater longevity compared to standard bottles.
