Produced in Ay by Bollinger, this cuvee represents the rose counterpart to La Grande Annee, created only in vintages deemed suitable for long ageing. The 2007 release reflects a challenging but ultimately successful growing season, with a warm spring followed by a cooler summer and a well-timed harvest that preserved freshness and aromatic clarity. The composition is dominated by Pinot Noir, typically around 72 percent, with the remainder Chardonnay sourced from Grand Cru and Premier Cru vineyards such as Ay, Verzenay, Cramant, and Oger. The defining feature is the addition of around 5 to 6 percent still red wine from Bollinger’s La Cote aux Enfants vineyard, a rare Grand Cru site used to produce structured Pinot Noir. This method differs from saignee rose production. Instead of skin maceration, the red wine is blended into the base Champagne, giving greater control over colour, tannin, and aromatic profile. It also introduces a more vinous character, linking the wine stylistically to red Burgundy.

Vinification follows Bollinger's traditional approach, with fermentation carried out entirely in small oak barrels. This allows controlled oxygen exposure, contributing to texture and depth. Only the first pressing is used, ensuring purity and concentration. Ageing takes place on lees for extended periods, often well beyond the minimum requirements, typically six years or more. The wine is also aged under natural cork rather than crown cap, a rare practice that enhances micro-oxygenation and results in a finer mousse and more integrated structure. Dosage is relatively low, around 7 grams per litre, maintaining balance while allowing the natural structure and acidity to remain prominent.

The overall style is structured and complex, combining the power of Pinot Noir with freshness and precision. Compared to lighter rose Champagnes, it is more vinous, with greater depth and ageing potential.

Tasting Notes
Nose:
Complex and layered, with redcurrant, cherry, and dried fruit. Notes of brioche, almond, and light spice develop with air.

Palate:
Full and structured, with flavours of red berry, citrus, and stone fruit. A fine balance of freshness and depth, with subtle oak and a creamy texture.

Finish:
Long and persistent, with lingering red fruit, toasted notes, and a mineral edge. A refined dryness gives a precise and elegant close.
