Produced in Ay, this cuvee is the rose counterpart to Bollinger's flagship La Grande Annee, created only in vintages considered suitable for long ageing. The 2014 release reflects a technically challenging growing season, yet one that ultimately produced wines with notable freshness, structure, and precision. The blend is dominated by Pinot Noir, typically around 63 to 67 percent, with the remainder Chardonnay sourced from Grand Cru and Premier Cru vineyards. The Pinot Noir provides structure and depth, while Chardonnay contributes acidity and balance.
A defining feature of this rose is the addition of still red wine from Bollinger's La Cote aux Enfants vineyard in Ay. This wine is produced separately in a Burgundian style and blended into the Champagne, rather than using skin maceration. This method gives greater control over tannin, colour, and aromatic intensity, resulting in a more vinous and structured rose style. Vinification follows Bollinger's traditional approach, with fermentation carried out in small oak barrels rather than stainless steel. This allows controlled oxygen exposure during fermentation, contributing to texture, complexity, and integration. Only the first pressing is used, ensuring purity and concentration.
Ageing on lees is extended well beyond the minimum requirements, typically for five years or more, with the wine matured under cork rather than crown cap. This rare practice promotes gradual micro oxygenation and results in a finer mousse and more cohesive structure. Dosage is moderate, around 7 to 8 grams per litre, allowing the wine to retain balance while preserving its natural structure and acidity. The overall style is powerful and vinous, combining the depth of Pinot Noir with freshness and precision. Compared to lighter rose Champagnes, it is more structured, with greater ageing potential and a profile closer to still red wine in character.
