At the core of Bollinger's identity, this non vintage cuvee is built to reflect consistency, depth, and a distinctly Pinot Noir driven house style. Rather than aiming for lightness, the wine is structured and layered, with blending and vinification techniques designed to emphasise texture and complexity. Pinot Noir forms the backbone of the blend, typically making up around 60 percent, sourced primarily from the Montagne de Reims. Chardonnay contributes precision and lift, while Pinot Meunier adds approachability and fruit. A significant proportion of reserve wines is included, often aged for extended periods in magnum, which adds depth and continuity across releases.
Fermentation is handled partly in small oak barrels, a relatively uncommon practice in Champagne. This introduces controlled oxygen exposure during vinification, allowing the wine to develop greater texture and integration without dominating with oak flavour. Each parcel is vinified separately before blending. Malolactic fermentation is generally allowed, softening acidity and contributing to a rounder mouthfeel. Ageing on lees typically exceeds three years, well beyond the minimum requirement, developing fine bubbles and subtle autolytic character such as brioche and toasted notes.
The dosage is moderate, usually around 7 to 9 grams per litre, balancing the wine's structure without masking its natural acidity. The result is a Champagne that sits between richness and precision, with a more vinous character than many non vintage expressions. Unlike lighter styles, this cuvee is built with food pairing in mind, offering enough body and depth to complement richer dishes while maintaining freshness.
