Description

Description:

Holding 9 litres, this format sits between methuselah and nebuchadnezzar in the hierarchy of large Champagne bottles. Its size slows the evolution of the wine, allowing a more gradual integration of fruit, oak influence, and autolytic character, resulting in a notably refined texture. The blend remains true to Bollinger's identity, with Pinot Noir forming the structural core, supported by Chardonnay for lift and Pinot Meunier for softness. Fruit is sourced primarily from the Montagne de Reims, with a substantial proportion of reserve wines included to maintain depth and consistency across releases.

Vinification is partly carried out in small oak barrels, introducing controlled oxygen exposure that enhances texture and gives the wine a more vinous profile. Each parcel is handled separately before blending, allowing precise selection and balance. Extended ageing on lees develops notes of brioche, toasted almond, and pastry, while preserving freshness. The larger volume encourages a slower and more even integration of these elements, producing a smoother and more cohesive expression. Due to its size, this format is rare and requires specialised handling during production, particularly for riddling and disgorgement. It is typically reserved for large events or extended cellaring rather than everyday consumption.

The overall style is broad, structured, and highly integrated, with a clear Pinot Noir backbone and a refined, polished texture.
