Colour
Chestnut gold - a visual hint at the influence of sherry wood.
Nose
A complex and enticing nose opens with freshly baked pastry, sweet almonds, rose petals and grapefruit. Dried spices are balanced by subtle mahogany and incense tones, while underlying maritime breeze adds a soft saline contour.
Palate
The coastal character comes through clearly: seaweed and fresh sea air meet rich raisins and dates. Creamy fudge, waxed red apples and warm spice - reminiscent of star anise - intertwine, delivering layered complexity and sustained interest.
Finish
Spicy and aromatic with caramelised walnuts at the fore. The star anise note gently recedes to reveal lemon peel, ripe pears and a lingering whisper of sea salt that echoes long after the last sip.
