Discover the exceptional Domaine Gayrard Gaillac Blanc, crafted from the rare and indigenous Loin de l'Oeil grape in the heart of the Sud Ouest region of France. Situated on a historic limestone plateau at the foothills of the Causses de Quercy, Domaine Gayrard boasts over five centuries of winemaking heritage. Under the stewardship of Pierre and Laure Fabre, the estate has been revitalised with a passionate commitment to organic and biodynamic practices, carefully nurturing both the land and vines by hand with sustainable methods. This remarkable Gaillac Blanc is produced from a single parcel of old Loin de l'Oeil vines, tended organically in shallow limestone soils that impart a distinctive brightness and refreshing acidity to the wine. Benefitting from a unique microclimate where warm Mediterranean influences are tempered by cooling oceanic breezes, the grapes reach optimal maturity before being delicately harvested by hand. The vinification process is gravity-fed and decidedly traditional, employing wild yeast fermentation in seasoned French oak barrels and lengthy lees maturation, resulting in a wine that is both complex and elegantly balanced.
