Produced in Jalisco, Mexico, this expression represents the unaged foundation of the Don Julio range, designed to highlight the natural character of Blue Weber agave without the influence of oak. Established in 1942, the brand is closely associated with a more refined and carefully controlled approach to tequila production. Mature agave plants are harvested after several years of growth, typically between seven and ten years, when sugar content is at its peak. The piñas are slow-cooked in traditional brick ovens, a method that allows for gradual conversion of starches into fermentable sugars while preserving a softer, more developed agave profile compared to faster industrial cooking methods. After cooking, the agave is crushed to extract juice, which is then fermented under controlled conditions. Fermentation duration is carefully managed to develop flavour while limiting unwanted by-products. Distillation takes place in copper pot stills, usually in two stages, producing a clean yet characterful spirit.

As a blanco tequila, the spirit is either unaged or rested only briefly before bottling. This preserves the primary agave character, allowing vegetal, citrus, and slightly peppery notes to remain at the forefront. Unlike aged expressions, there is no influence from oak barrels. Water used for dilution is treated to ensure purity and consistency, contributing to a smooth and balanced final product. The overall production approach prioritises clarity, precision, and a softer style compared to more traditional or rustic tequilas. The result is a clean and approachable blanco, with a focus on fresh agave and a controlled, polished profile.
