Produced in Spain, this gin is defined by a Mediterranean-focused botanical profile, moving away from traditional London dry emphasis toward a more savoury and herb-driven style. Distillation takes place in a small coastal facility, with the concept built around regional ingredients associated with Mediterranean cuisine.
A neutral grain spirit is used as the base, chosen for its clean and unobtrusive character. Production follows a batch distillation method in copper pot stills, allowing for careful control over extraction and aromatic balance. Unlike many gins where all botanicals are distilled together, Gin Mare uses separate maceration and distillation for individual botanicals, which are then blended. This approach allows greater precision in managing intensity and flavour layering.
The botanical composition includes the classic foundation of juniper, coriander seed, and citrus peel, but is distinguished by the inclusion of Arbequina olives, rosemary, thyme, and basil. Each of these is sourced from Mediterranean regions and contributes to a distinctly savoury and herbal profile. Botanicals are macerated for extended periods, often up to 36 hours depending on the ingredient, before distillation. Delicate botanicals are handled separately to preserve their aromatic qualities, while heavier components are treated to ensure full extraction without excessive bitterness. The use of olive as a botanical is particularly notable, adding a subtle saline and oily character that differentiates the gin from more citrus-led styles. Herbal elements such as rosemary and thyme contribute a dry, savoury depth, while basil adds a fresh green note.
Water used for dilution is treated to maintain consistency and clarity, ensuring that the balance between botanicals remains stable in the final product. The overall style is distinctly non-traditional, with a strong emphasis on savoury herbs and Mediterranean identity. Juniper remains present but is integrated rather than dominant, allowing the botanical composition to take centre stage.
