This is probably the most recognisable sherry in the world, and for many people, it defines the cream sherry category. First created in 1882 in Bristol, it was specifically designed to suit British tastes, blending different styles of sherry into something smoother and slightly sweeter than traditional dry expressions. What makes it distinctive is the blend. Instead of coming from one style, it combines Fino, Amontillado, Oloroso, and Pedro Ximénez, each aged separately in solera systems before being brought together. This gives it both structure and softness, with the sweeter PX component rounding out the drier, nuttier base wines. The result is a wine that feels complete and accessible straight away. It doesn't require much attention or understanding to enjoy - it was built to be consistent, balanced, and easy to drink. That's also why it became hugely popular in the UK, especially through the mid-20th century.

The style sits firmly in the medium-sweet category, but it's not purely about sweetness. There's a clear nutty, oxidative character underneath, which gives it depth and prevents it from feeling overly soft. It works in a surprisingly wide range of situations:

- Slightly chilled as an aperitif
- With desserts or cheese
- Even over ice or in simple cocktails

Overall, this is a classic, heritage sherry, more about balance and familiarity than complexity, but still one of the best examples of its style.
