This sits at the extreme end of the sherry spectrum - pure Pedro Ximenez, aged for over 30 years, and classified as VORS (Very Old Rare Sherry), meaning it has been officially certified to exceed that age threshold. Unlike blended or medium styles, this is 100% PX, made from grapes that are typically sun-dried before fermentation, concentrating sugar and flavour to an intense degree. What follows is decades of ageing in the solera system, where the wine slowly evolves, gaining density, complexity, and complete integration. The result is not just sweet - it's highly concentrated and textured, almost closer to a syrup or liqueur in feel than a conventional wine. Everything is amplified: fruit, sweetness, and depth, but also balance, with a subtle lift preventing it from becoming cloying.
There's no sense of development happening in the glass - it arrives fully formed. The ageing has already done the work, bringing everything into a seamless whole where richness and structure are completely aligned. What defines this style is intensity with control. Even in small amounts, it feels complete, which is why it's often served in very small pours, either on its own or alongside desserts.
