After initial maturation in new charred American oak barrels, the whiskey is finished in a second set of hand selected barrels - often seasoned with Spanish sherry or other complementary cask styles - to deepen complexity and enhance flavour integration. Appearance

Aroma
Rich vanilla and toasted oak lead, followed by caramelized brown sugar, dried apricot, and a hint of toasted almond. Subtle spice-cinnamon and clove-emerges with a soft undercurrent of oak tannin.
Palate
Smooth and layered. Sweet caramel and toffee open the palate, evolving into dark fruit-fig and raisin-alongside gentle baking spice and rich oak spice. Hints of roasted nuts, black pepper, and dark honey bring depth and structure, while the double-barrel influence adds complexity.
Finish
