Description

Description:

Produced in Barbados, this expression reflects a blend-focused approach that combines traditional pot still richness with the refinement of column distillation. Mount Gay, one of the oldest rum producers in the Caribbean, builds this release around intensified cask influence and a more pronounced toasted profile. Molasses from sugarcane forms the base, fermented under controlled conditions to produce a balanced wash. Distillation is carried out using both copper pot stills and column stills. Pot still distillate contributes weight and aromatic depth, while column still spirit adds structure and smoothness.

Maturation takes place initially in ex-bourbon oak casks, where the rum develops foundational notes of vanilla, caramel, and light spice. A key feature of this expression is a secondary maturation in heavily charred bourbon barrels. This additional cask treatment increases the influence of toasted wood, enhancing notes of smoke, spice, and deeper caramelisation. The use of charred barrels introduces compounds such as char-derived phenols and intensified vanillin, giving the rum a more robust and slightly smoky character compared to lighter aged expressions. Tropical ageing conditions accelerate this interaction, concentrating flavour and promoting integration. Blending is used to combine rums of different ages and distillation styles, ensuring consistency while maintaining complexity. The final spirit is bottled at a slightly higher strength than standard expressions, supporting its fuller body and intensity.

The overall style is richer and more oak-driven than many Barbados rums, with a clear emphasis on toasted notes and structure while retaining balance and smoothness.
