Crafted by passionate winemaker Elizma Visser, this wine is a true expression of the region's unique terroir, where Breede-shale, Renosterveld, and sandstone soils contribute to the wine's complexity and character. Sourced from a single bushvine block planted in the early 1980s and cultivated with sustainable viticulture, the vineyard benefits from the moderating influence of surrounding mountains, resulting in grapes with concentrated flavour and vibrant natural acidity. With limited intervention in both vineyard and cellar, Olifantsberg champions a philosophy of producing sustainable, remarkable wines reflective of their origin-a commitment recognised with numerous awards for both vineyard management and winemaking. Fermentation takes place using natural yeasts in a combination of large French oak foudres, seasoned barrels, and stainless-steel tanks, each imparting subtle differences and layers to the wine's profile. Ageing on the lees for nine months further enhances texture and complexity, culminating in a refined Chenin Blanc that is both full of character and wonderfully balanced.
