Pernod is one of France's most historic anise-flavoured spirits, originally created in the early 19th century and closely associated with traditional absinthe culture. Following the 1915 ban on absinthe in France, Pernod reformulated its recipe to produce an anise-based liqueur without wormwood, preserving the distinctive herbal freshness and louche effect that turns the liquid milky when diluted with water. Crafted through the distillation of star anise, fennel, and a selection of aromatic herbs, Pernod offers a refined, drier alternative to sweeter pastis styles. Bottled at 40% ABV, it delivers structure and intensity while maintaining remarkable smoothness.

Deeply rooted in French cafe tradition, Pernod is typically enjoyed diluted with chilled water, which releases its essential oils and transforms both texture and aroma.
