Produced in London, this gin is built as a modern interpretation of a traditional London Dry, developed through research into historic gin recipes at the Ginstitute. It uses a classic neutral grain spirit and a tightly defined botanical mix of nine ingredients, including juniper, coriander, citrus peel, angelica, orris, cassia bark, liquorice, and nutmeg. Distillation takes place in small copper pot stills, with botanicals macerated before distillation to ensure full extraction and integration. The process follows strict London Dry principles, meaning no flavouring is added after distillation. This results in a spirit where balance is achieved during production rather than adjusted afterward.
The profile leans slightly toward the spiced end of the London Dry spectrum. Juniper remains central, but is supported by a warm mix of baking spices and root botanicals, giving the gin a broader and more structured character. Citrus is present but less dominant than in brighter, more contemporary styles, allowing spice and depth to take a more prominent role. The overall style is designed with versatility in mind, working particularly well in classic cocktails where a balanced, structured gin is needed to interact with other ingredients rather than dominate them.
