Created as the signature expression of the house, this Cognac is a Fine Champagne blend, composed exclusively of eaux-de-vie from Grande Champagne and Petite Champagne, with a strong majority from Grande Champagne. These chalk-rich soils produce spirits with exceptional aging potential, allowing for long maturation and gradual development of complexity. The blend itself is built from hundreds of individual eaux-de-vie, some aged for decades, with certain components reportedly reaching up to 30-40 years. This extended maturation in French oak introduces a wide range of compounds through oxidation and extraction - vanillin, spice, dried fruit, and rancio notes - while also softening the structure over time.
Distillation follows traditional Cognac methods in copper pot stills, typically on the lees, which enhances body and aromatic intensity. The long aging process, combined with meticulous blending, results in a spirit where no single element dominates. Instead, fruit, spice, floral notes, and oak are layered and integrated into a cohesive whole. Compared to VSOP expressions, the profile is significantly deeper and more textural, with greater emphasis on dried fruit, spice, and oxidative character rather than fresh fruit. The structure is dense yet polished, with a noticeable richness that develops further with time in the glass.
