Today, the distillery combines both pot and column still distillation, creating a blend that balances weight and clarity.
Made from molasses, the rum is aged for a full decade in ex-bourbon oak casks under tropical conditions. This accelerates maturation, increasing extraction of compounds such as vanillin and oak tannins while encouraging oxidation that softens the spirit over time. Unlike many contemporary rums, it is produced without added sugar, colouring, or flavouring, allowing the natural interaction between distillate and wood to define the profile.
