Produced in Highgate, London by Sacred Spirits, this gin is built around a single botanical focus - pink grapefruit - within a broader classic gin structure. What sets it apart is the distillery’s use of vacuum distillation, a method carried out at lower temperatures than traditional stills. This preserves delicate aromatic compounds that would otherwise be lost through heat, resulting in a notably fresher and more vivid flavour profile. Rather than using only peel, the production incorporates the entire grapefruit - peel, juice, and pith, allowing a fuller extraction of oils, bitterness, and natural sweetness. This creates a profile that is more layered than typical citrus gins, with both bright and slightly bitter elements contributing to structure.

The base follows a traditional gin framework with juniper and supporting botanicals, but these are deliberately restrained. The emphasis is on clarity and precision, with grapefruit acting as the dominant note while still allowing underlying spice and herbal elements to come through. Compared to sweeter pink gins, the style is more dry, zesty, and aromatic, with a sharper citrus edge and less emphasis on sugar.
