Produced in small batches in London, this gin represents one of the early modern revivals of traditional copper pot distillation in the city. Sipsmith was established in 2009 and became the first copper pot distillery to operate within London for nearly two centuries, marking a significant moment in the resurgence of craft distilling in the UK.

The spirit is distilled using a classic one-shot method in copper pot stills named Prudence, Patience, and Constance. Unlike multi-shot or concentrate-based production, the one-shot approach ensures that all botanicals are distilled together in a single run, resulting in a more integrated and consistent flavor profile. This method requires precise control over botanical ratios and cut points, as adjustments cannot be made post-distillation without compromising the London Dry classification.

A neutral grain spirit serves as the base, chosen for its clean profile and ability to carry botanical character without interference. The botanical recipe is deliberately restrained, focusing on balance rather than novelty. Juniper berries form the backbone, supported by Macedonian coriander seed, orris root, angelica root, liquorice root, cassia bark, cinnamon, ground almond, and a combination of Spanish orange and lemon peel. Prior to distillation, the botanicals are macerated in the base spirit for an extended period, allowing essential oils to dissolve fully. This step is critical for achieving depth and cohesion, particularly with heavier root botanicals. The subsequent distillation in copper facilitates the removal of unwanted sulfur compounds while enhancing aromatic clarity.

Careful attention is paid to the heads and tails cuts, ensuring that only the purest portion of the distillate is retained. The resulting spirit is diluted with demineralized water to bottling strength, maintaining the crispness and precision expected of a London Dry gin. No post-distillation additives, sweeteners, or artificial flavorings are permitted or used. The overall style adheres closely to traditional London Dry parameters, emphasizing juniper prominence, citrus brightness, and a dry, structured finish. Despite its historical inspiration, the gin reflects modern expectations of clarity and balance, contributing to its role in redefining contemporary British gin.

Tasting Notes
Nose:
Clear juniper leads, supported by fresh citrus peel and a subtle earthy depth from root botanicals. Light spice from cassia and cinnamon adds complexity without dominating.

Palate:
Structured and balanced, with juniper at the forefront. Bright lemon and orange notes provide lift, while coriander and spice develop mid-palate. A slight nuttiness from almond rounds the texture.

Finish:
Dry and clean, with lingering juniper and gentle spice. Citrus fades gradually, leaving a crisp and classic impression.
