Produced in Jerez de la Frontera by Gonzalez Byass, this expression represents a younger interpretation of the house style, shaped by the same technical framework but with a shorter average ageing period within the solera system. The base spirit is distilled from wine, typically derived from Airen grapes, chosen for their neutrality and efficiency in fermentation. Column distillation is used to produce a clean and consistent spirit, forming the structural foundation of the brandy. As with other expressions in the range, a portion of more characterful distillate may be incorporated to provide additional depth and texture.

Ageing takes place in American oak casks that have previously held sherry, most commonly Oloroso. These casks remain central to the development of flavour, contributing notes of vanilla, light caramel, and dried fruit even within a shorter maturation period. Due to the reduced average age compared to older expressions, the influence of fresh spirit is more apparent, resulting in a brighter and more direct profile.  The solera system is again employed, with the spirit moving through a series of criaderas where gradual blending occurs between younger and older components. This ensures consistency across batches while maintaining the characteristic style of Jerez brandy. The "5" designation refers to the average age of the spirit within the system rather than a strict minimum.

The warm Andalusian climate continues to play a significant role, accelerating interaction between spirit and wood. However, the shorter ageing period results in less oxidative development and a more straightforward expression of cask influence. Dilution is carried out using purified water to achieve bottling strength, preserving clarity and balance. The final profile is lighter and more approachable than older solera expressions, while still retaining the defining characteristics of the category.

Tasting Notes
Nose:
Light and approachable, with notes of caramel, vanilla, and soft dried fruit. A gentle hint of oak and a touch of spirit freshness are present.

Palate:
Smooth and moderately light-bodied, with flavours of toffee, light raisin, and subtle spice. Oak influence is present but less pronounced, allowing a slightly fresher ????it character to show through.

Finish:
Short to medium, with soft caramel and light oak fading into a gentle warmth. A mild sweetness lingers briefly before a clean, simple finish.
