Description

Description:

Positioned as a hybrid between brandy and cognac-style production, this expression is assembled in Spain using a combination of aged grape distillates sourced from different regions, including both French and Spanish origins. The concept centres on blending rather than single-origin identity, with an emphasis on finishing and cask influence to shape the final profile. The base distillates are produced from white grape varieties such as Ugni Blanc, distilled using both column stills and traditional pot stills. This dual approach provides a mix of lighter and more structured components, allowing flexibility during blending. The individual brandies are aged separately before being brought together, with some components matured for extended periods.

A defining stage in production is the finishing process in Pedro Ximenez sherry casks. These casks, previously used to age intensely sweet sherry, impart a concentrated layer of dried fruit character, along with residual sugars absorbed into the wood. During finishing, the brandy interacts with these compounds, gaining notes of raisin, fig, and dark sweetness without becoming a liqueur. The finishing period is carefully controlled to ensure that the influence of the cask enhances rather than dominates the base spirit. This stage also contributes to a darker colour and a more rounded texture, as well as increased aromatic richness.

Blending plays a central role, combining distillates of different ages and styles to achieve balance. The result is a spirit that sits between traditional brandy and a more modern, cask-driven interpretation. Reduction to bottling strength is carried out gradually to preserve integration and texture. The overall profile is richer and more dessert-oriented than standard brandy, with a clear emphasis on cask influence and sweetness derived from the Pedro Ximenez finish.

Tasting Notes
Nose:
Rich and expressive, with notes of raisin, fig, and dark dried fruit. Hints of chocolate, vanilla, and soft spice add depth.

Palate:
Full and rounded, with flavours of toffee, dried fruit, and a gentle sweetness. The Pedro Ximenez influence brings a syrupy richness balanced by light oak and spice.

Finish:
Medium to long, with lingering dried fruit and soft sweetness. A gentle oak dryness and light spice provide balance on the finish.
