Cotswolds Odyssey Barley 2015 Single Malt Whisky is a rich and fruity single malt whisky, aged in ex-bourbon & reconditioned red wine casks. It's a tannin-rich malt with dark sugar and lots of spice on the palate, followed by notes of caramelised Seville orange marmalade and hints of dark fruits and treacle.
100% of the barley used in this Cotswolds Single Malt Whisky is grown locally, giving the distillery a close relationship with local farmers and very much ensuring that the spirit is a product of the land that produced it. Unusually, all the barley is then floor malted at Warminster Maltings – a traditional, unhurried practice rarely used for the entirety of a distillery's malt requirements. The distillery mashes half a tonne of malted barley twice a day and uses an innovative pair of yeasts, together with a four day long fermentation to maximise the production of fruity esters. The double distillation in Forsyths copper pot stills is carefully designed to extract only the cleanest, fruitiest spirit, which is then aged in two types of cask. The first being classic first-fill ex-Bourbon barrels and the other being shaved, toasted and re-charred red wine barrique. The two liquids are then married together before bottling. |
