Dubonnet is a historic French aperitif wine first created in 1846 by Parisian chemist and wine merchant Joseph Dubonnet. Originally developed to make quinine more palatable for French Foreign Legion soldiers stationed in North Africa, Dubonnet quickly gained popularity in France and beyond for its rich, bittersweet character. Crafted from fortified wine infused with herbs, spices, and quinine, Dubonnet offers a refined balance between sweetness and gentle bitterness. The most recognized expression, Dubonnet Rouge, is known for its deep ruby color and complex aromatics. It has long been associated with classic European aperitif culture and is famously enjoyed in a simple gin pairing favored by Queen Elizabeth II.
