Despite its name, production is overseen by a Spanish house with deep roots in wine and brandy, applying a similar focus on blending and refinement to gin. The base spirit is a high-quality neutral grain alcohol, selected for its purity and clean profile. Distillation is carried out in small batches using traditional copper pot stills, allowing for precise control over extraction and cut points. This batch approach contrasts with large-scale continuous production, enabling a more controlled and consistent botanical integration.
A total of 12 botanicals are used, combining classic gin elements with more unusual components. Juniper remains central, supported by coriander seed, angelica root, and citrus peel. Additional botanicals such as bergamot, gardenia, and savoury introduce floral and slightly herbal complexity, creating a profile that moves beyond a strictly traditional structure. Botanicals are introduced through maceration prior to distillation, allowing essential oils to dissolve fully into the base spirit.
